Yup, blue eyes seems to be the requirement.
Unfortunately, as far as I can tell, the game never explicitly reveals that to you, however. You would only figure it out by paying close attention to the descriptions of your victims.
As I said, you have to pay close attention to the character descriptions when choosing who to feed on. Anybody who doesn't make you want to vomit has blue eyes.
But once again, the game doesn't explicitly state this, and I think the fact that we don't get to personally choose the trait that our Ventrue desires is very weird.
Except it's not. How the hell would you possibly recognize blue eyes being the trait you're looking for when you've only had 1 victim to feed on? That's something that you would only discover after feeding multiple times, and by paying very close attention to their descriptions. And since you can't feed whenever you feel like it, there's a good chance you might forget the details if you didn't write them down.

I'm sorry, but how in the hell is that meant to be obvious? Your sire had blue eyes, so now you want to feed exclusively on blue eyed people?

It could just as easily be that you have a craving for people who exude a force of personality, or speak with a level of authority.
"you can see his eyes, Pale Blue and confused"
that's two for two on the Eyes the first is your Sire, the one detail you remember is his Eyes, Steel blue and now the Waiter your first feeding AND your First kill Pale Blue two people with significance to you have just appeared, i get the feeling you are the type of person to skip over everything and not look at the clear clues being laid out in front of you
Once again, how is that obvious foreshadowing? Unless the game actually wrote BLUE in all capital letters like you did, there is nothing about that description that makes it stand out from the rest of their traits.
So your sire had blue eyes. Pointing that out isn't foreshadowing what kind of people you like to feed on. It's called providing us with some character description. Or are you suggesting the writer would just slap "they have eyes" onto a character sheet when filling out their description?
I'm not expecting us to have a unique, one of a kind feeding condition. But I would expect for the player to have the ability to choose what kind of trait they prefer in their vessel, instead of having it randomly selected for us. Such a trait being part of a list for various NPC's we encounter during the story.
But then again, that level of freedom would probably give the player way too much agency, and it's abundantly clear the ST of this chronicle seeks to railroad us to hell and back.
I don't skip through things on a visual novel unless it's a repeat playthrough and I'm trying to find different outcomes for scenes I've already explored. That being said, I haven't touched this game in months since I finished all three characters. There's no reason to do so, since the player has no sense of agency. Once you survive the initial embrace trial, it becomes impossible to fail, or alter the story in any significant way.
So it's possible I may have forgotten some details about the game during that time.
