They aren't making any more money by delaying it than they would by having hit their Nov 19 date. If anything, at least short term, they are losing money as a result of this. (Just the additional marketing budget needed alone will cost them money, to say nothing of temporarily lost presales.)
They have calculated that it is less of a risk and more in their company's interests than not, long term, to ensure launch parity across platforms and avoid the current gen consoles taking a hit in aggregated review averages. Provided the game sells well - which it will if it's well received, and probably has a built in cushion of sales even regardless of that at this point just due to marketing effectiveness and hype - they can more than afford to lose some presales on PC and upset some customers.
Whereas if it isn't well received, gets below a 90% aggregate review average on current gen, and/or they delay only for console while releasing for every other platform, that hurts their sales much more than this temporary delay will due to perceived (and real) unfairness to current gen platforms to which this game has been marketed heavily for years. Current gen is still one of their two primary markets (the other being PC,) with only a minority of players able to play it on next gen systems (and no next gen edition available for purchase, just current gen with backward compatibility.)
