I get used to controlling them fairly quickly though, as long as I treat them like real life cars. Start slowing down before a turn comes up and no full speed driving in the city or when trying to turn. As long speed is controlled, the cars control nicely. I only go full speed on straights.
Thats it really.
But like the others said, it depends on the car. Some cars drive like wet bricks on soap.
There are handful of cars that do handle pretty well though.
The problem is that the cars you get early on are pretty awful.
If you have problems, try some of the offroad cars you get in the badlands. Their handling is fantastic, even on the road.
They are also relatively cheap
You are not wrong. Cars especially are difficult since they are bigger and thus more easily collide with things.
Personally I somewhat enjoy driving the Yaiba Kusanagi motorcycle, although I don't like its scripted behaviour when I try to do hard brake turn. The bike will slide but it will always arrive at exactly 90 degree turn from its original heading.
Download Vortex Mod Manager and install the following two mods:

Make it so that Cyberdrive loads first and handling second, there, you're welcome driving fixed.
What I particularly don't like about cp2077 is how it "cheats" giving an illusion of something rather than creating an actually functioning game system. Kusanagi's brake turn behaviour is a good example. As is creating lights in the distance to make it appear like there are cars there, even though there arent.
All of which my driving is with mouse/keyboard, so it just pertains to your style and control and which vehicle you are using to do your tasks/missions with, of course scripted missions, good luck with that, driving a van on dirt had me whipping all over the place, most common issues when starting to drive, is the delayed input on keyboard, tapping could help stabilize the vehicle better in situations rather than holding
