Report a translation problem
1. tell her about the goblin camp, then long rest.
2. go to the camp, and then betray her.
3. run away from combat.
4. go back into combat and you will have switch sides.
5. when you get to moonrise, you can recruit her. (and other party members wont be mad)
If you use mods though there is a mod on Nexus that allows you to still recruit Minthara by siding with the Tieflings (and another flavour for using a ring to summon her in if you would prefer getting her early and romancing her at the Tiefling party, they're called Daughter of Lolth), so you'd get Halsin as well. Though there are some issues with it like Halsin and Minthara's tents will sometimes overlap at camp and if something goes wrong with the mod Halsin might spontaneously die as the game checks sometimes if both Halsin and Minthara are recruited and will kill Halsin as you aren't supposed to be able to have both of them. The dying issue could potentially be solved by just not inviting him into your party at the end of his story though, I dunno. Depends if you care about him haha.

TLDR: No way without risking bugs and glitchiness, unless you download a mod and side with the Tieflings.
She is being mind-controlled and even expresses some regret later on. She is still evil, but not homicidal. There isn't any narrative reason not to be able to recruit her on a good playthrough.
Overall it really seems like larian makes you sacrifice a lot of good characters and plot lines to redeem/recruit minthara which is very poor design. At a minimum it should open some new ones. If I'm right they have scripted out all the tiefling from later acts if you don't kill minthara. At a minimum you should be able to do the grove battle and choose to knock her out or something.
She goes completely against wyll and Karlach's beliefs, so it makes sense they'd want nothing to do with her.
Sometimes you have to make tough choices in an rpg.

I would have loved it, if there is some kind of mini prison in your camp where you could just lock in Minthara and start fixing her. The moment she starts becoming a peaceful person, you could just let her out of this mini prison and continue fixing her while having her in your party. It would be just awesome if I could just use (the currently bugged) non lethal attack on Mintharah and get a selection option "imprison her in camp".
It's pretty sad that if you want Karlach in your party, you are forced to kill Minthara, no exception. Especially if you want to role play as a Paladin, it can seem pretty strange to have no middle ground of fixing her somehow without attacking the grove.
It's actually pretty strange how Sadowheart has two completely different progression paths that don't require you to abandon other party members, but the moment it's about Minthara, you can only chose between her or Karlach.
Did you build a cage for all the goblins and the bugbear too? The only reason you wouldn't see her as anything other than evil is having knowledge that she's a recruitable character
Oh.. Minthara needs "fixing". Loviatar knows she needs it :) She needs "fixing" till she stars to love it ;)
