The same way as other traps.

With the trap in your inventory right click on the ground and choose place trap, which will let you place the trap on the ground, then right click on the trap to bait trap, which will let you choose between eligible baits in your inventory, cheese works best for mousetraps. Now you will want to stay at least 75 tiles away for at least an hour and when you come back and right click on the trap hopefully you will get a check trap option that will allow you to take whatever the trap caught.

Just add a bit of cheese or meat to the mousetrap and you should catch stuff, but I really like this mod for traps:

I usually use tomatoes for my mouse traps, since it's renewable and they're nutritionally worthless at 14 calories a pop.
