finding a backpack is live long enough to get one off a zombie, loot a school for a chance, loot a house for a chance.
evade hordes by breaking line of sight. walk away is best, but key here is to break line of sight. time in game will get you better. die a lot. A LOT. but keep playing to get better and it will eventually become easy.

That one will always hold one 27 sized backpack.
IMHO that story prebuild should be expanded on, though.
Remember you can outwalk the zombies in this game. Its all about taking fights with a plan and not get overconfident
As for evading hordes you can go around buildings or go inside the forest to lose them. Of course you can always circle back around if you find anything of interest later.
You can find Hiking bags, large backpacks, and very rarely Military backpacks at Surplus stores
You can find all 3 at Military installations at higher rates of spawns
However you can find all bags and mode like satchels on Zomboids
Fanny Packs can be found in Houses and Locker Rooms
Duffel bags can be found in houses and locker rooms
Sports bags are found in sports stores or randomly in homes or via foraging junk.
Duffle bags are found in police stations and randomly on zombies
Big backpacks are randomly found in homes, late game zombies carry them specifically hunter/camping/military themed ones. Surplus/hunting stores also have them as do any of the 3 military check points.
As for avoiding zombies...the pro answer is just kill them bro. The newbie answer is just break line of sight around a building/in trees. You can try either option but i can assure you killing them all is the only worth while option due to how they function.
There's nothing late game about those zombies. They are generated on world creation in specific stories.
Also an option is the LV exclusion gate. The soldier zombies there carry lots.
Just make sure you aren't always running. Save it for when you need to escape.
