Personally I think this is the best compromise, as opposed to being CDDA, or Dwarf Fortress, where there's far more depth, but graphics are intentionally lacking, we have graphics that showcase animations and create more immersion whilst not being overly ambitious with the game's graphics.
If you consider the size of the map, going full 3d say like ARMA would take up an enormous amount of space and deny the game to those who don't have the financial/computing resources.
If you want a zombie survival in 3d, 7 Days to Die is probably what you are looking for.
That being said, the only thing I'd really complain about in PZ is the UI (which, thankfully, the devs have opened the workshop and allowed modders to address).
They don't decided for it - they simply don't have alternative option and this is a best graphics they're capable to make.
PZ engine is based on obsoleted language that also unsuited for that scale of things.
Because of that their only option is to keep going until engine will finally break under extreme complexity of code (in most cases unnecessary too as devs learned how to code in process so there a lot and a lot of low-quality code inside).
Also if they did have super realistic graphics, you'd be the same person commenting how come the game runs bad and should have worse graphics so anyone can play it.
I pay attention to the fact my character is starving, sick, and exhausted. And I'm blocks away from safety and have to stumble home on the last little bits of my character's energy, and hope I don't run into more zombies on the way back.
The game play and setting can become incredibly immersive (at least for me).
I grew up in the 90s playing those old school sierra and lucas arts games. I think the graphics are great. Especially when you zoom in and really look at the detail and realize the time it took to make some of the objects.
