Everyone's infected vs Infection mortality: Never
Without infection mortality, you will not succumb to the knox virus but will go through the stages of panic, nausea , fever and so on. What happens if I set transmission to everyone's infected and use vanilla infection mortality setting?

If I recall correctly, Everyone's Infected is the same as the default Transmission setting, but if you die you'll always come back as a zombie if your head is intact regardless of how you died.

Never tried it myself. In this kind of setup you probably can't die through the "zombification" from Knox Infection, but if you die from any other means, your corpse will reanimate as a zombie regardless.

Everyone's infected is apart of the "Transmission", like how does the virus spread.

Everyone's infected makes it so that once you expire, you will turn into a zombie regardless of being infected by normal means.

Infection mortality option is just how long before you "turn" or "die" after being infected by a zombie.

Like you have said, with infection mortality set to never, once infected by a zombie you will never turn until you die by other means. Not sure if panic happens, fake zombie infection panics may happen?

With "Everyone's infected" and a set time on "Infection Mortality" (Like 1 mintue, 1 day etc) You will basically carry an inert zombie virus within you forever, so if you die it will take over and reanimate you. But being bitten or scratched by a zombie will "strengthen" this virus and normal infection event will take over and kill you by the set time. (I play by these settings, real nice stuff)

This is similar to the style of walking dead.
