Personally, I've enjoyed everything in Destiny 1 and Destiny 2. Nothing has disappointed me.
Jokes aside are you new to the game because it kind of sounds like this may be your first season which is fine but the mechanics are basic and the only one that sticks out to me this season is the kill a mini boss to grab the buff and then get rid of it by killing another mini boss before it kills you. Everything else is so over used and trivial at this point and there is even a meme about the holy trinity of throw ball, dunk ball, or stand on plate which this season mixes up by having shoot laser to break instead which has still been in the game for at least 6 years although the new onslaught covers the the ball throwing hole in my life for the last 4 months.
The activity is supposed to get harder as you go making reaching the "end" an actual challenge and there is nothing wrong with failing early on it is all just loot and there is a more chill single play through option if you don't like the difficulty increase.
As for the specific stand on the plate and shoot shielded targets thing goes usually you only have to break the shield and then you can leave the plate which can be quickly done with special or heavy weapons that limit your time stuck in the one spot otherwise titan can put up a wall of cover and warlock and put down a healing rift to ease the pressure or you can try solar subclasses that usually offer a few ways to heal or regenerate your health which seasons do expect you to build craft if you're still new to the game and haven't gotten many exotics or builds figured out.
Also they're designed for 3 players so maybe you're getting stuck alone either because of match making or lack of it.
I am new to the game(played a few months) and have played all of the expansions they allowed me to buy in chronological order and I played the three seasons before Season of the Wish. I really enjoyed the first two Seasons and their activities, which had none of the above mentioned faults. The closest a previous season this expansion came to being like the situation I described was that one Ritual Altar Round(Season of the Witch) with the Wizard Boss who summons all those spitefully positioned Hive Turrets and then proceeds to fly around dodging you so the timer runs out. A few of the missions are also really sadistic, like the timed bomb run on Neomuna.
I generally consider myself a very good gamer, but I am also very good at recognising when the challenge isn't genuine, but is relying on other factors like jank physics, cheap tricks, unfair encounters, bad design, or a lack of foresight from the designers, aong other things The default Lightfall expansion zone, Neomuna/Neptune, is a prime example of disconected design that relies on jank with its forced Sparrow/Racing segments, which were all utterly horrible. A game that is one thing(in this case a FPS) should not be leaning into other mechanics that are so poorly developed. I had to google certain Sparrow controls because the game literally did not explain all of the Sparrow controls. I have seen comments from people on the internet who say they have been playing for years and yet did not know about certain Sparrow controls because the game literally did not explain it.
