Is fishing staying when final shape comes?

All three seasonal content are going away when Final Shape releases.

They should never have released fishing as it is now, it should have been doing the "fishing" part automatically. So you can just sit and relax with your coffee or whatever.
THAT would actually have been really nice. We just can't get nice things.

You get free loot for giving other people recommendations. Or weekly clan engrams and so on.
We already paid for it thru DLC's, initial fishing would still have to be player initiated.
It would have been better then the nonsense that it is now. People even did make their own macros exactly for this to dont be bothered by something so boring. And they do the same thing with sword skating - tho reason there is seemingly different, yet the same, perfect jumps everytime.

It's officially confirmed on the Bungie website that the Tackle Box is going into the DCV. So, maybe there's a chance that they leave the fishing spots just as a goofy little activity, but you definitely wouldn't be able to cash in the fish for loot.

Fair bit on the clan engrams although it is more like subsidized loot and commendations is a once a week thing and you still need to do activities to get commendations. What you're proposing is an afk/idle farm that gives loot including exotics for "sitting back with a coffee."
