Saladin is supposed to be the oldest chronological Guardian (AFAIK), and I believe he's supposed to be on the order of 500 years old. Zavala and Osiris are supposed to be almost as old.
Osiris is probably functionally the oldest Guardian due to the time he spent exploring alternate timelines in the Infinite Forest. (Although, Sagira is gone, so his time as a Guardian has ended, and the remainder of his life is likely to be short as Guardian's measure time).
If you want to be technical about it, Banshee-44 is probably older, although he's not a Guardian (again, AFAIK) and his memory is ... spotty.
All the Exos technically date from before the collapse, but the ones who are Guardians were all probably revived long after Saladin, and I don't think any of them remember the period prior to (or during) the collapse.
Ada-1 is also ancient. It's also important to note that (AFAIK) Ada-1 is the only known Exo who was not created by Clovis Bray (that we know of). She's the only Exo with a "1" after her name, meaning she's the original download and has never been reformatted, nor has she had Clovis mess with her memories (in order to make her more "stable").
There's Atraks-1 too, first known non-human Exo.
Uh, no? There were big setbacks of course, but the technology is still there, there isn't much preventing people from still using it. There are many examples of friendly aerial fighters in Destiny, we see fleets of them in multiple cutscenes (the intro of Ligthfall, for example). Not sure why a paratrooper seems strange to you either; its the fastest way to get someone where they need to be, wherever that may be. Heck, we are technically paratroopers, considering how frequently we 'jump' out of our ship at our destinations.

Given that Saladin was made a Guardian during the Dark Age, and represents (literally) living memory of that time, I'd say yes, his age is relevant in at least providing a rough time frame of how long ago the Collapse occurred.
My point was: The Collapse dates back longer than Saladin has been alive (as a Guardian). (Which, according to the Lore books from the Season of the Risen, was about 500 years ago).
