I was the same way when I started but pretty quickly discovered it was a mistake in the way we (as hoarders) think. Your stash is strictly meant to keep weapons you can't get a hold off easily...for all your hoarding needs there is the collection tab. So if you find that purple godroll weapon; stash it...anything that's lower than your current lightlevel and NOT a godroll; trash it.
The collection tab is useless for anything with random rolls, though, isn't it?
The thing is that most of THOSE weapons are REALLY easy to find (most weapons in collections will list an origin on where you found them) and also note that I don't just mean godroll as in maxed rolls but also a weapon you just REALLY like.
I REALLY liked Ringing nail for PvE against wizards when doing EP (for instance) and it's listed as gotten from Black Forge....so playing a couple of them it took me no time at all to get 5 copies of said Ringing Nail in my inventory...of which I kept the best. Stuff gets different for stuff like exotics or that random prime engram drop...those I might store for a while...but the same can't be said for stuff like Ikelos-type weapons.
Much like the commenter before me said (with a little addendum of my own); learn what type of missions drpop what TYPE of weapons. Remember that stuff you scrap net you weaponsmith components which can be turned in for weapons (either with Banshee) or by buying directly from your collections page.
You're not keeping 15 copies of the same weapon in Borderlands either; right? You store the best one IF you use it at all...Destiny 2 works under the same principle.
Once I figure out how (or IF) you can get that AR in other configurations I will farm it for a godroll one and scarp all others.
Meanwhile; the exotic scoutrifle was nice enough but I have a wavesplitter in that slot...so I stashed it. along with the Vow from last season because I don't use handcannons that often (having trashed 5 others I found...yes people I found 5 eriyanah's vows last season -_-)
You didn't get the context, destiny 2 has tons of armor, weapons ect. And he likes to stash, so 500 slots in comparison is definitely tiny. Maybe you should read a little more lol.
Good advice in general, thanks, though a special thanks for reminding me of this. I think I noticed that some time ago, but I'd forgotten, and I don't look much at the collection.

Since Shadowkeep they do actually have a purpose now that they can drop at your power level and fill out any low level slots for your gear, but if you're at the powerful gear cap they are useless aside from dismantling.
Nope, you can pull them from collections like all the other cosmetic stuff like ghost shells, shaders, and ships.
Over time you'll identify your favorite or good perks/stats/looks/energy type and instantly identifying what you think is trash will be easy. I personally think "Am I actually going to use this gear this season?" If I think not then I obviously trash it because there is no point in keeping useless armor. I recently 90% of iron banner armor I collected from season 5-8 because I'm never going to use it so why bother keep it. The only ones I kept was the titan set from season 4 or 5 because I liked the look and some from season 8 for each class because they had good perks and I like the look, but those are coming back this season as armor 2.0 so I'll probably get rid of the old ones.
TL;DR - If you're not going to use it then don't keep it, and I'm not talking "Oh I might use it at some point" sure keep telling yourself and all those skyrim potions that.
Delete blue gear once you outgrow its power. Delete 99% of purple gear. Purple gear is all random rolls, so check to see if it's worth keeping.
For armor, probably delete stuff with stats less than 55 that you're not wearing. Recovery is generally considered the best stat, and then whatever else you like (usually intellect or discipline). Mobility is good pvp. You also have to pay attention to energy type, as it's important for what kind of mods it can equip. So, it's less useful to have 3 sets of void armor, since you can only wear one at a time, than it is to have 1 of void/solar/arc sets.
For weapons it's more complicated. It's probably safe to delete sidearms and scoutrifles, since they're not really meta (but if you like them, keep 'em). Rampage and Kill clip are usually good stats. Too be honestly, you probably won't accidentally scrap anything too important, as the best weapons you usually have to grind for (so you will know what is what). Keep what you like to use.
You can repurchase shaders, exotic/rare ships and ghosts, and transmat effects from the collections tab in your inventory. It's not expensive. Even exotic weapons you can easily rebuy. Exotic armor has random rolls, so it's not easily replaced.
