Since you have Haku profile pic I would suggest Elena who is ice themed. Build Elena as a tank or bruiser and spam skills, if the enemies refuse to move they get frozen debuff if you keep hitting them with normal attack and skills.

Tazia, who is crystal and gems themed that they look close to ice. Tazia throws crystal shards and create crystal walls.

Selecting any Character in Collection/Store will bring you to their Summary page, and in turn, the "Difficulty Meter" of said character. Any Character with just a single bar on the meter are the "easiest" characters to learn. Pick any of them and you'll be good.
