NPC (Jobs) ships spawn in somewhat randomised fashion and then may take forever to arrive at their destination. Also once they have set a course it wont change untill they are actually there.
The size of the economy is so big though that I dont think you can cripple the economy for long periods of time, unless you actively keep destryiong ships over a large range of systems.
Also the economy has not a market pricing like a real world economy, which would price the goods based on overall demand and supply, whereas in X games, stations will price their goods based on their own stocks. So even if there was just one SPP it would sell Ecells at min price if the storage got filled up.
