The Count of Dublin is a great start since you're almost guaranteed another county within a few years.
--> Duchy of Dublin -> claim on Kildare.
Or something along those lines, assuming post-Old Gods patches haven't changed the situation in Ireland (Haven't played much after TOG). Easy, low risk and decent potential.

For tutorials concerning the DLC stuff, try looking at the most recent tutorials. Aggripa Maxentius' tutos are pretty recent I think.
This guy has a 10 part CK2 tutortial series, and it's awesome. After watching these videos, I got right into CK2 and actually knew what to do :P
But there is always more to learn.
EDIT: I notice a few other people posted his links as well, so that says something, I'd say!
And once you want to test your metal, try starting in The Old Gods in Iceland :D
