Captured a few M2s in RHS, mostly because they're almost impossible to kill. Keep hitting them with RPGs from various angles and eventually all the crew dies, at which point you can enter the vehicle.
I haven't tried it with Ace, so the damage rules might be different there. Crew choosing to dismount did seem rare, although occasionally they'd jump out after a few hits.
1 - The use of low damage rockets like RPGs and targeting turrets and tracks to get a functional kill so you can approach
2 - Depending on the vehicles, it is either the crew or dismount infantry that is still alive inside the vehicle. You can try target the appropriate area to get rid of them
3 - Use small IEDs and blow both track off to encourage the crew to dismount
4 - for thinner armored vehicles, use the 50 cal and rinse the crew/passenger compartments.
5 - Alternatively, just don't try to capture live armor. Go to airfield and steal uncrewed ones. for the AAC airfield, you can drive safely undercover into the hanger and steal any uncrewed vehicle that spawned in.
There are more exploitative ways to de-crew but I frown upon it.
