Looked all over but couldn't find a single lady with better than basic stats. Anyone find someone I didn't?

You can use the Marry Anyone MOD. It works in this and I've married shop ladies and criminal women and it's created children with no crash.

one of the shimazu girls has plenty of stats but is 17 so you gotta wait a in game year first
