Both are in 7zip format so you'll need to unpack them, then put the pack files in your "C:\Program Files (x86)\Steam\steamapps\common\total war shogun 2\data" folder.
I made a mod for M2TW called Eras Total Conquest which covered Southeast Asia in the 1547 campaign, so I had some information already about their units. I haven't done much research regarding what soldiers the Dai Viet army had so I don't know if they had armoured units.
Only the very wealthy in Ayuthaya would have European armour, which is why only the general's bodyguard wears it.
I don't know the names of the clothing but drawings from the time period show soldiers wearing this type of clothing.
The Dai Viet wore a conical hat and this hat looked the closest to what they wore.
I'm only certain about the colours the Ayuthaya (Thai) and Pagan (Burma) wear. The rest I guessed the colour to try and make them all look different.
The Zhou clan is one of the Tusi clans that lived in the south of China. They're made up of Miao and Dong Tusi.
Japanese factions can recruit some Jurchen units, which is why they show up in custom battles.
I haven't done much with the European trader, other than making them playable in custom battles.
