I think that as a King you should be allowed to remove a fief from a vassal without exiling them. Obviously it would damage relationship.

So basically you would go to your minister and tell them you want to remove a feif from a vassal. Then you'd choose a lord and take one of their feifs. Then you could give that fief to someone else or keep it as a royal feif.
