Fire-Laser-
The sentry is designed in a way that looks like it takes a lot of cooling and has problems with over heating.
And also has great vision over the battlefield with it's spider-like eyes.
All levels do not run on ammo to shoot, but instead overheat if fired for long periods of time.
These shots also pierce enemies.
The Sentry also allows the engineer to see enemy HP.
This coupled with pircing enemies makes it a great Sentry to use with the wrangler, aside from overheating.
The third tier shoots down enemy projectiles in a lightning arc fashion and reloads itself after each shot.
So in all, incredibly offensive on the attack with a pushing Engie, and great defensively on it's own, but suspect to being attacked constantly, but great at mopping up enemies that are tightly grouped together.
The sentry gun allowing the Engineer to see the enemy's HP seems a little out of place to me. I mean, why?
And if its shots pierce targets like you said, I think it's a fair balance if it had little to no knockback.
Also, I thought of something different when I read the description. "It gets really hot". Well, what if the sentry would burn any enemy that comes in contact with it?
It would also burn the Engi who built it (not when he's picking it up though), but it's pretty neat against pesky Spies.
And logically speaking, only the HP of enemies within the Sentry's range.

PROS

4.build time increased by 18 seconds
If its energy tank goes below a certain level (Let's say 20%), then the Sentry will shut down as if it's being sapped or disabled. To displace this, the Sentry would have higher health as well; I would say 180 for Lv1, 210 for Lv2, and 235 for Lv3. Values are basically just a level higher than default sentries.
Energy Weapons could also rob the sentry of Energy, same way the Pomson robs Cloak and Ubercharge.
These are just a few ideas that could be used to offset the pros of higher sentry health and firing speed. C:
