Well the grenades Idea was originally going to be used for every character each with their own unique one however, Valve though this would be a bad Idea because they felt like players would spam them a lot. Your idea for a trench club though is great.

Early interwar period armies (1919-1930) was very much like late ww1 armies, without the world at war part. Things didn't really changed fast or anything back in the day. They were still using tanks form 1916 in early ww2. Something form ww1 can easily fit in a 1920s-early40s army and vise versa.

Good point. I guess they did not change a lot anyway...

The flamethrower appears to be stylized (couldn't find one that matched this) but the helmet is a definite WW1 French design. It wasn't the best quality but it was easily produced and was even adopted by the Italians.

WW1 french adrian helmet, and coat, though I can't say much for the mask.

It's basically 1900-1990's-ish time line, but it's mostly WW1 and WW2 stuff(which I'm personally in love with)
