How do you get a secondary career?
Title is pretty self explanatory, it is clearly possible to have two careers at once, but I can't work out how to actually make that happen

Unlock mind reading
Do the mind reading of Han Bolong (Dongjing's tavernkeep).
After that, if you have a companion who is level 4+ in the career you want to learn, he can get the companion to teach you their career.
