Culture
So I was wondering, since you can convert towns, forts and villages to your roman culture, can you switch your culture to ,example, Germanic? Is that a thing right now or is it going/not going to be in an update.

You can switch to Judean if you decide to convert to Judaism via Great Temple in Jerusalem.
It opens interesting, if hard enough, gameplay for you.

Exactly, currently only Judean and Roman culture is supported.

Also, is there a way to become the Jewish Culture without having to start a rebellion.

You get it via speaking with priest in Great Temple and becoming Judaist.
The Jewish Revolt happens regardless of it, though you can start it yourself if you are Jewish and get the choice to become leader of it in such case.
You don't need to start Jewish revolt personally if you seek to turn to Judaism and Jewish culture.
