My TTS is definitely the latest. I'm not sure about how to update workshop addons.
If I do need a new save, is it possible to transfer everything over easily or do I need to manually recreate our setup again?

Your save files do not get updated when the workshop mod is updated. You need to click on the workshop mod again and start from scratch if you want to use the latest version of the mod. This is because TTS mods are actually each just a single text file. When you save a game, it is a copy of that text file with changes made to it based on how you interacted with the game. When a workshop mod is updated, if TTS merged the mod changes into your saved game, there is a good chance something would break and that is a bad user experience so TTS does not do that. However, as you are now seeing, when Tabletop Simulator itself has an update, it can break mods and saves alike. Then the mod creators have to update their mods to fix the problems and everyone has to start over from a fresh mod to play the game without problems again. Hopefully that is clear.
The vast majority of workshop mods for TTS are intended for a single use play session and don't have to worry about such things. For a long form game like Gloomhaven, it is highly advisable that you track your campaign progress separately from TTS. You can use google docs and sheets, websites and apps designed for this purpose, track it all on your physical copy of the game, or just use pencil and paper. It is also possible to save some objects from your current save game and import them into a fresh mod to save you some setup time, but be careful which objects you bring with you. Try to avoid bringing anything that has scripts attached to it and be careful that objects don't lose their names (which includes decks of cards that lose their name if you draw all the cards out of the deck). There are other posts on these forums and videos on youtube and posts on blogs that can help you with these things. I personally only save and copy over player character cards, player attack modifier cards, items owned by players, and city and road event cards since you add and remove cards from those decks as you progress. We track the items available at the store externally and do not bother packing and unpacking the entire store every time we update to the newest mod version.
