For those that can't figure out how to unfreeze time, in Journey mode you get access to change the time from your inventory. The original creator left freeze on because you can reset the Angler's quest by changing the time to Midnight and then immediately changing it back to Dawn. You can pull this menu up by clicking on the bunny with a construction hat underneath your inventory, or by pressing C on the keyboard.
