How To Make Over Easy Eggs

This guide will show you the simplest method to make "over easy" eggs in less than 30 minutes. Over easy eggs are eggs fried on both side while leaving the yolk runny.

Prepping the Pan
First things first you need to prep your pan. I recommend a non-stick pan. The non-stick pan will greatly decrease the chances of the egg being stuck to the pan while you are trying to remove the egg from the pan.

If you do not have a non-stick pan, putting about a tablespoon of butter (or substitute) onto the pan should provide the same non-stick effect.
(Even if you have a non stick pan i still recommend this, plus the butter adds flavor!)

Once you have your pan, set your stove temperature to medium. If your stove does not have a specified "medium" temperature, use about 300°f.

NOTE:To gage how long you need to wait to put eggs in the pan, wait about 5 minutes after the butter or substitute has melted.

Getting ready to add the eggs to the pan
When you are putting eggs into an already warm pan, you don't want them to be cooked at different rates, and that is what will happen if you put the eggs in separately. Ideally you want to have the eggs enter the pan at the same time; to achieve this you must use a bowl.

You should always use the freshest eggs in your fridge so that you minimize the chance of breaking the yolk prematurely. Remember this simple test to see if your eggs are fresh

  • place the egg in a bowl of water
  • if the egg lays down on its side, its quite fresh
  • if the egg stands upright, its still fine to eat, but you shouldn't eat them over easy, i recomend boiled.
  • if the egg floats, its not a good idea to eat it.

After you have selected two eggs, you need to crack them into a bowl here's a video showing you how to crack an egg. Once you have cracked the eggs into a bow, you need too make sure you have a timer on hand.

Cooking the eggs
Once you are sure the stovetop has reached medium (or 300°f) you want to slowly add the eggs to the pan.

This is where the timer comes in:
  • Set a timer for 2 minutes.
  • Make sure to check the eggs throughout the two minutes
  • Once the 2 minutes is up, check the eggs.
  • If you can see through the eggs after the two minutes, you want to cut a gap inbetween the two yolks as pictured

NOTE: You do not want to wait over 4 minutes for the eggs to cook on one side, it will ruin the runny effect of the yolk, you aren't just making playdoh eggs are you?

Once you can no longer see through the eggs, you want to flip them over! It is best that you have a long spatula. (it makes sure the eggs are flipped at the same time!)] (Long Spatula pictured right)


Once you have flipped the eggs, it is up to you how long you want to cook them. If you want a runny-solid yolk, go for about a minute and a half max. If you want a runnier yolk, do a minimum of 45 seconds. In my opinion a yolk that doesn't run as much goes great on toast!
