It is perfectly doable to simply ignore mercenaries until the baron has bought them all off and instead concentrate on rushing a weapons production and militia buildup, then take one territory after another until you can have several retinues reinforcing your army, and then take on the baron's last army with just your retainers and armoured-up militiamen.
It's also possible to rely entirely on mercenaries and retinues only for offense and keep militia in reserve at home in case of raiders.
There are a multitude of legitimate ways to win the game against the baron without cheesing, but sometimes circumstances may force you to use cheese. And for those cases, I felt compelled to include all the ways one could weasel one's way out of a difficult situation.
