For the “stars” on the maps, this is exactly what HEX: MANGO replied to just above your message.

As for the “X” (for example, on the mississipi map), these are simply “scattered” watering points.

What do the X's on some maps mean? For example, black bear on Mississippi Acres Preserve, there's circles and then there's x's and I'm not quite sure what to do with the X marks

The stars indicate hotspots for a species, a place where you'll most likely find more of a species versus other non-hotspot areas
