Hotel colours can be changed ingame.

Click the hotel, click MANAGE HOTELS and choose the color.

This hotel displays a shiny black texture in my game. I thought that 5 downloaded objects in my game that had an invalid LOD texture size might be causing some of the hotels that I use to show a black texture, so I deleted all 5 of those objects.

However, I have tested almost all of the Hotels from the workshop and seven of those hotels still have the shiny black texture (Tudor Inn, Tudor Coaching Inn, Courtyard by Marriott, Spring Hill Suites, Town Hostel, Congress Hotel, Excalibur Hotel).

Some of these are scratch built and some are converted from other people's workshop buildings that DO NOT have the texture problem. It looks like something can go wrong with hotels created for the workshop.
