Setup walk-through
  1. Go to the game folder (Steam\steamapps\common\Starfield\) and rename "Starfield.exe" to, for example, "starfieldprofile.exe"
  2. Rename "sfse_loader.exe" to "Starfield.exe"
  3. Go to "Data" folder and if you don't have the SFSE folder, create one. (The file path should look like: Steam\steamapps\common\Starfield\Data\SFSE)
  4. Right click and edit the SFSE.ini (if there is no "SFSE.ini" inside the SFSE folder, create one)
  5. Paste the following into SFSE.ini:

    [Loader]
    RuntimeName=starfieldprofile.exe

  6. Save the SFSE.ini
  7. Steam will now launch Starfield via SFSE

Yeah, the same way you launch SKSE or OBSE, NVSE or FOSE......

A more useful tutorial is how to keep both a modded and unmodded steam copy.... Install game. Install mods. Rename game folder. Reinstall game. Now you can switch back and forth by just renaming the folders again.

A small suggestion, Nvidia's game profiles are based on the filename (I believe AMDs are as well) and according to Nvidia Profile Inspector "starfieldbeta.exe" and "starfieldprofile.exe" are both valid names for Starfield. So instead of renaming your executable to StarfieldOG.exe I'd recommend using starfieldprofile.exe to ensure the proper profile is active.
