Campfires giving cooking skill is a vanilla behaviour, but it gets cancelled out by being considered a 'Refinery' rather than a 'Crafting' device, which is changed by this mod. You likely have a conflicting mod that either changes the function further (load order issue) or changes/replaces some other aspect of the campfire function that makes it directly incompatible with this mod.

Theoretically if a mod changed the food stores to remove fish items, the dried grandfish should still be able to be stored, as it is a new item.

Grandfish is a vanilla item, are you able to store the dried variety?
If another mod changed the ability to store the original grandfish, the best way to handle that would be a patch for the mod in question - you can't really make a mod to reinforce intended behaviour.
