I'm just a simple guide to being a Jedi in Dark Souls.

No mods. Purely what you can find in-game.

Equipment is organized into low-tier, mid-tier, high-tier, and very high-tier, loosely according to Star Wars lore, how far you have to go to get certain sets, and what it takes to use them effectively.

Take the path of a Jedi, and you'll take your first steps into a larger world.

A world... without shields.

Your journey begins at character creation.

I recommend starting with the Wanderer class, the most Jedi-like of the starting classes in terms of equipment and skill set. The Wanderer has a fitting armor set for the low-tier, a sword with quick, graceful moves, and high dexterity, something Jedi are known for. The extra points in intelligence will also bring you closer to your goal of being able to use the Magic Weapon Sorcery, representing a Jedi's Lightsaber.

For a generic Jedi look, you can go with the Far East Traveler default face for the peaceful smile and eyes and the healthy glow of Light-side users.
Or if you are specifically going for a Mace Windu look, dark skinned and completely bald.

If you really want to go the extra mile, choose a gift that represents the tools a Jedi might carry:
  • Goddess's Blessing = Small, portable, potent medicine
  • Black Firebomb = Grenades (Yes Mira, Jedi can use grenades)
  • Binoculars = Macrobinoculars
  • Pendant = Up to imagination. For example, the good luck charm Annie made for Padme.
  • Master Key. For investigation.
  • Tiny Being's Ring to approximate a Jedi's greater health for the early game.
  • Old Witch's Ring to approximate a Jedi's subtle ability to cross language barriers.
Come to think of it, any gift but Twin Humanities, unless you are really particular about keeping up your human appearance.

As you level up, your focus will be on Vitality, Endurance, Dexterity, and Faith, with enough points into Strength and Intelligence to use the weapons and spells you'll get later and in Attunement to have a selection of "Force Powers" at your disposal.
Low-tier: Jedi Wanderer
A Jedi in low-key, practical garb, wandering the galaxy either laying low, or on a personal mission.

Examples include Kyle Katarn of the Jedi Knight games and Kanan Jarrus of the Star Wars: Rebels show.

It is important to keep lightweight to do fast rolls. While you can block with your weapon, it is often better to dodge. You will also usually be two-handing your weapon, though you can go one-handed if you are using your "Force Powers" or if there are different moves available.

Armor
The entire Wanderer Set, found near the bottom of Blighttown if you don't already have it from starting with the Wanderer class.

Weapons
  • Scimitar: Starting weapon of the Wanderer class. Also found off of Catacombs skeletons and bought from the Undead Merchant in the Undead Burg.
  • Iaito: Katana found in Blighttown by taking a leap.
  • Uchigatana: Best acquired by first joining the Forest Hunter covenant in the Darkroot Garden, talking to Shiva on the spot, then buying it from him at the bottom of Blighttown. Both Iaito and Uchigatana have mostly the same movesets, and Iaito may have a slightly longer reach, so if you don't want to go to much trouble, simply using the Iaito is quite acceptable.
  • Talisman/Thorolund Talisman/ Sorcerer's Catalyst: Tools for using Force Powers.
  • Bows & Crossbows: Backup "blaster" for situational use. Your Lightsaber and the Force will be your mainstays, but sometimes there may be a moment of opportunity or desperation. You likely won't be buying the ammunition, but you can use what you find as loot.

Spells / Force Powers
  • Force: Omni-directional Force Push.
  • Healing Miracles: Various forms of Force Heal.
  • Magic Weapon: Properly activating your LIghtsaber, with a light blue blade color.
  • Aural Decoy: The distracting form of Mind Trick.
  • Hush/Fall Control: Some of the stealth abilities of a Jedi. Can be combined with their complimentary rings for a "Hello there." moment.
  • Seek Guidance: To hear the "Will of the Force".

Rings and items
  • Wolf Ring: This will greatly help with not getting staggered all the time, as your armor will not have any poise to it.
  • Blue Tearstone Ring: Good early find to aid with defenses.
  • Havel's Ring: In case you still need to lighten your load.
  • Items: You are free to use whatever items you scavenge from the environment. Throwing Knives and Firebombs count as gadgets the Jedi Wanderer may have in his toolkit. Gold Pine Resin makes for a discount yellow Lightsaber blade color. Make each item count, but don't be afraid to use them up.
Mid-Tier: Jedi Hermit
An experienced Jedi laying low to avoid attention. If he has a purpose, it is in one place. Don't let his ragged appearance fool you, he's fought more battles than you can imagine.

Examples include Old Ben Kenobi from the original trilogy and Echuu Shen-Jon from the Galactic Battlegrounds RTS.

Armor
  • Tattered Cloth Hood: Found in the Poison Swamp, below BlightTown.
  • Holy Robe & Trousers, Traveling Gloves: Found on a ledge after a long drop at the bottom of the Catacombs.

Weapons
Same as the Jedi Wanderer. or you can progress to the Jedi Master's spellcasting tools as you go.

Spells/Force Powers
In addition to the previous rank's powers...
  • Great Magic Weapon: A more powerful, properly blue Lightsaber blade color. Found by knocking down a chandelier in Anor Londo.
  • Remedy: A more particular form of Force Heal that can cure illness. Found by crossing a perilous bridge at the rear of BlightTown.
  • Magic Barrier & Great Magic Barrier: Defensive powers that "absorb" offensive powers directed towards the caster.

Rings
In addition to previous...
  • Ring of Steel Protection: Found in Sen's Fortress up the outdoor stairs with the rolling balls.
  • Ring of Favor and Protection: Looted from Oswald after invading him in Anor Londo. Emulates a Jedi's above average health and stamina.
  • Cloranthy Ring: Found in the Great Hollow.
High-Tier: Jedi Master
With a lifetime of experience delving in the mysteries of the Force, the Jedi Master is among the most powerful of the Jedi Order, and fit to be among it's leadership.

Examples include the various members of the Council in the prequel trilogy or in the Old Republic era, including Mace Windu and Master Kenobi.

Armor
  • Wanderer Hood
  • Sage Robe & Traveling Gloves: Found in the chest in the Duke's Archives that appears where Big Hat Logan sat when he vacates the area after buying all his spells and exhausting his dialogue.
  • Holy Trousers

Weapons
  • Tin Darkmoon Catalyst & Darkmoon Bow: Created by the Giant Blacksmith in Anor Londo from the soul of Gwyndolin. To get both will require two playthroughs.
  • Darkmoon Talisman: Gained by joining the Blades of the Darkmoon covenant in Anor Londo. A Darkmoon Seance Ring will need to be acquired from the Catacombs to dispel an illusion wall that conceals the way to Gwyndolin.
  • Avelyn: More advanced backup "blaster". Found on top of a bookcase in the Duke's Archives by dropping down from above.
  • Washing Pole/Iaito: Purchased from Shiva in Blighttown after joining the Forest Hunter covenant. You can keep using the Iaito or Uchigatana, but if you really want to go over the top, the Washing Pole will give you an absurdly long Lightsaber blade.

Spells/Force Powers
  • Darkmoon Blade: Acquired by advancing one rank in the Darkmoon Blades covenant by turning in 10 Souvenirs of Reprisal. Gives your blade a brilliant purple glow.
  • Replenishment: Received by rescuing Reah of Thorolund in the Tomb of the Giants. A longer-term Force Heal.
  • Wrath of the Gods: Purchased from Reah in the Undead Parish right by Firelink Shrine. A more powerful omni-driectional Force Push that does damage.
  • Emit Force: Acquired by speaking with Siegmeyer of Catarina at Firelink Shrine after helping him in Anor Londo. The closest to the classic directional Force Push.
Very High-Tier: Jedi Temple Guard
All Jedi are skilled in combat, but most prefer to head off conflict before it can begin, or heed the greater mysteries of the Force. But there are an elite few who are dedicated to martial mastery with the Lightsaber and the Force, to be ready to face the Dark Side wherever it may lurk. Some stand guard in the Jedi Temple itself in ornate uniform, while others roam the galaxy on a mission to root out evil where it hides.

High Endurance (and Havel's Ring) will be needed to fast-roll with this setup. If that's a tall order, you can settle for medium-rolls, as you'll now have more proper armor and poise and can take more of a hit.

Armor
The complete Paladin Set, found in Gravelord Nito's area after defeating Paladin Leeroy's invasion in the Tomb of the Giants (you'll have to be human for him to show up). If you defeat both in one play session, you'll have to quit out and reload your save to load the armor loot in Nito's area.

The glow isn't part of the helmet, unfortunately. It is some loot dropped by one of the ghosts of New Londo in mid-air.

Spells/Force Powers
  • Sunlight Blade: Found in a chest past Gwyndolin after defeating him. Gives your blade the brilliant yellow color of a Jedi Sentinel.
