Fighting Multiple Enemies
Sekiro is a tough game, so when more then one enemy gets in the mix, it can be quite difficult to keep putting up a fight against more than one enemy (and in general in any other Souls game).

How To Deal With More Than One Enemy
You don't. Seriously, don't. Sekiro and Souls favors 1 v 1 encounters, so don't willingly go in to multi-target fights. However, if you have to, you have options:
  1. Run away
  2. Pick them off one by one
  3. Spam deflect and hope for the best

That's really it. Sorry for people that expected a better guide than this, but this is how it's done.

A good technique is to use a mortal sword blow or whirlwind slash to deathblow an enemy with low posture, then before deathblowing use the skill that allows to jump behind a deathblowed enemy, activate the bloodsmoke on it and pick off 2 others enemies using stealth, reactivating the bloodsmoke on the last one. This a costy technique.

Another way easier technique would be to pack enemies then spam mortal sword blows, but it is weaker against a pack of low + high posture enemies.

Note that the first technique is extremely handy against double deathblow miniboss as some can be deathblowed this way, just lure them toward a low posture enemy, deathblow said enemy, jump past it with the skill, bloodsmoke, deathblow the high posture enemy, rince and repeat !

Whirlwind slash makes short work of mobs of enemies. It will usually produce one or two deathblow opportunities, and flat out kill weaker enemies in the mob like dogs and archers.

1. Whirlwind slash
2. Deathblow
3. Double jump/jump kick
4a. Retreat and fight them one at a time.
4b. Aggressively repeat setp 1.

It helps too if you can double jump out, and get all of them in front of you instead of all around you.
