Tower shields are indeed garbage. The only scenario where they are useful are in situations where you need to block multiple attacks and can't parry both of them or don't know the attack pattern of a enemy. (Trying tower shields before the smol ones is a choice I regret big time.)
Polearms certainly don't have the range of a bow, that is a correct observation. However neither does a bow have a comparable attack rate. They are excellent against wolves, especially while still using copper equipment as blocking them is impossible at that stage.
If you're writing the ultimate guide you can't ignore any weapons because then it is a limited guide to what you perceive as viable.
Knives, I've been told by the sneaking guide, can oneshot a troll. I will try that next...

Your guide assumes the reader understands the difference between parrying and blocking (which is parry is blocking with proper timing)
But what? Battleaxe is my absolute favourite! And that is mainly because their block indeed DOES parry and offer huge blocking power, The stagger they cause after a successful usually allows you enough time to fire a full 4 swing combo on your opponent provided you still have the stamina to do so.
Ofcourse, your points about the slow attack animation and high stamina cost are completely valid, though the secondary attack option covers up the weaknesses of the main attack.
80% movespeed is fast enough because you won't need to run away from your enemy, and only few enemies are smart enough to flee from you.
