Introduction
This guide shows you a variety of ways to kill an unsuspecting shopkeeper and rob his store, this has 5 different methods of doing it, so sit back, relax, and enjoy!
Method 1: Use the items
Sometimes you may come across a shopkeeper selling weapons, such as shotguns or freeze rays, it is time to use these weapons against the naive shopkeeper! For ones like the shotgun it is pretty simple, just pick it up and blast out the brains of the shopkeeper, however you can also do it with the mattock!

To do it with the mattock, pick it up and stand just in front of the shopkeeper, the shopkeeper may move when you grab the mattock, that's okay, you just want to stand immediately next to him on the side with the entrance to the shop, as shown below.
Now, facing away from the shopkeeper, use the mattock, this will hit him and send him backwards, move back so you are still next to him, and still facing towards the entrance, use the mattock, keep on using it until he is dead.

NOTES:
  • When using items like the shotgun, consider beforehand any explosive items in between you and the shopkeeper, you don't want to get blown to bits!
  • Moving backwards with the mattock may be hard to do at first, if you do it while swinging the mattock, your character won't turn around allowing for an easy next swing.
Method 2: The rope part 1: safe rope
Wouldn't it be great to rob a shopkeeper in almost any situation, well you can with the help of A ROPE!

Find an unsuspecting shopkeeper.
Move all the items into the section where the shopkeeper stands, circled with red on the image.Stand where the shopkeeper is standing, and hit the rope button, this will cause the shopkeeper to drop his gun. Now, you must act quickly, grab his gun and shoot him in the face a couple times!

NOTES:
  • If the shopkeeper has a key, it makes this a bit harder, if you do accidentally grab onto the key instead of the shotgun. throw it away quickly so that the shopkeeper doesn't wake up and kill you.
Method 3: The rope part 2: Electric Boogaloo
"Ok," I hear you say, "but I want another method using the rope which is more dangerous but saves time." Well, oddly specific request, but, here you go!

Without moving any of the items, go and stand where the shopkeeper is standing, shown by a red circle in the image.
Just like the other method, use a rope and quickly grab the shopkeepers gun and shoot!
NOTES:
  • Just as with the last method, watch out for the key!
  • While this method is quicker than the last, it works better with non-explosive items, so watch out when using it with jetpacks and bombs, it might be better to go with Method 2 in that scenario.
Method 4: The inside bomb
Ropes aren't your style, how about some bombs?

For this one to work, you need to stand on the 2nd item in the shop, circled in red in the picture below.
Then, you need to simultaneously jump and throw a bomb, when you fall down you should land on the shopkeeper, then take his gun and do the deed. The shopkeeper could either get blown up by the bomb or you can keep shooting to kill him that way.

NOTES:
  • Sometimes you might jump on the shopkeeper and it doesn't get stunned, in this case just try and jump on him again.
  • Watch out for your own bomb! Don't want to blow yourself up!
Method 5: The outside bomb
Are none of these extra enough for you? Need something to prove your skills in spelunking, then this one's for you!

You'll want to start by standing outside the shop, about on the first block which isn't wood, shown in the image by a red circle.
Now, you want to crouch and place down a bomb, the key is the bomb can't go inside the shop, marked out by the blue box in the image.
Now pick up the bomb, wait a bit, and throw it. The timing is crucial, too early, and the shopkeeper will have had time to run away and shoot you in the face, too late, and you've blown off your own face. If you have done it perfectly, the shopkeeper should've had his face blown to bits.
NOTES:
  • In nearly all cases, another one of the methods will work better, I only use this one when I feel like murdering shopkeepers in the spiciest way possible.
  • In some cases there will be no block to stand on outside of the wood, in this case, this can be accomplished still by turning away from the shop and placing the bomb that way.
  • If your bombs are sticky, this method will still work, just remember they are sticky!
  • You can jump after throwing the bomb in case something tragic happens and the shopkeeper shoots at you.
Thanks
Thank you for reading, and good luck quenching your thirst for shopkeeper blood! Sorry about the resolution and FPS of the GIFs, steam has a limit set to file size so the gifs needed to be lower resolution.

Sorry for posting something that a couple other people have posted, (the forgiveness system) but I thought it would be a nice reminder, and I also gave it way more detail.

@Hell's-paitrent28 But if you buy out the turkey shop and don't anger him, it gives you + 70% chance for a turkey(s) to spawn on the entire run afterward.

If your trying to win your run, this isn't useful, because the forgiving system is extremely complicated. If you rob or steal from him, then its that level that he's mad, and the next one, if you don't hurt him. if u hurt him once, then its plus 1 level but that can only happen once per level. if you jump on him or something twice, that's still 1, i think.

The key part is actually just that if you kill him, its plus 4 levels, which makes the run a lot trickier. I've died to shopkeepers multiple times, but its still better then just having him angry at you forever.

Oh yeah, and also once you kill him a certain amount of times, you can't get forgiven, and they also set up these fortress things, (really just like outposts) that can lead to your death because there's like four of them in every one.

if you just rope the shopkeeper you can pick up the shotgun and leave immediately, then run back onces hes been kited away. If he has a key you can do the exact same thing because he will follow you out of the shop, but if he its a wall or cant for whatever reason, you can also just throw the key at him which will stun him for a bit longer while he is down, then run away the same way. you can also run with the key into the vault and open it, then just rope the shopkeep while he runs above you, but thats riskier. its better just to kite him away every time. No reason to do any of the above shown methods because they are all less safe than this.

new method: throw an item out of the shop downwards at about the third block from the right
you'll stomp the shopkeeper, take their shotgun and run

to those who might actually end up reading this: it is rarely a good Idea to kill shopkeepers, as doing so will delay the time until they forgive you(the first negative interaction(robbing, whipping and such add 2 to the sin counter, which rools down one per level and upon which's depletion you're forgiven, killing them adds four. Thusly I would suggest robbing them without killing them, then not interacting the next level to get forgiven just 2 levels after you first stole)

btw auther if there is something like a jetpack that you want when robbing a shop then pick the jetpack up and do one of the rope methods

"innocent people" is highly debatable.
