Spelunky 2 contains 32 achievements. Most of them locked to singleplayer and unseeded runs.
This guide obviously contains spoilers so, beware! (just text based, and under the spoiler tag)

1. "Story" related

You Got This

"Unlock the entrance."
Finish the Tutorial for the first time.

Feels Good

Make it past 1-4 in a non-seeded run.
Self explanatory.

Skills Improving

Make it past Olmec's Lair in a non-seeded run.
Also known as 3-1.

Persistent

Reach the Ice Caves in a non-seeded run.
Also known as 5-1.

Journeyman

Complete the game in a non-seeded run.
Self explanatory.

Ironman

Complete the game without using shortcuts in a non-seeded, single-player run.
Self explanatory.

Pilgrim

Reach the Sunken City in a non-seeded, single-player run.

Master

Complete the game by defeating Hundun in a non-seeded, single-player run.

Awakened

Reach the Cosmic Ocean in a non-seeded, single-player run.
To get there, is even more complicated than the Pilgrim achievement!, because of that, I made another separate guide on it. I recommend reading the guide for the Pilgrim achievement first.

Shadow Shopper

Reach the Black Market in a non-seeded run.
Only achievable on the Jungle Path.
To enter the Black Market, you have to use the Udjat Eye, gained in the Dwelling to easily find the entrance to it in the Jungle Path. The Eye will make a beating noise faster and faster, the closer you are from the entrance. Just put a bomb, and you will gain the achievement.

Legendary

Reach the City of Gold in a non-seeded, single-player run.
Only achievable on the Temple path.
To enter the City of Gold, you will need a crown (either the Hedjet from the Black Market, or the Crown from Vlad's castle), then kill Anubis in 4-1, grab their Scepter, and take it to 4-2. Use the Scepter as a key to open the golden door, and you will be inside!

2. Shortcut related

Mama's Little Helper

Unlock the first shortcut.
Self explanatory.

Mama's Big Helper

Unlock all three shortcuts.
Self explanatory.

All three shortcuts will ask for some items/gold, being these
For the first shortcut:

• 2000 gold
  
• 1 Bomb
  
• 10,000 gold

This will unlock a door in the basecamp that will let you start a run from 1-4.

For the second shortcut:

• 1 Rope
  
• Any weapon
  
• Any mount

This will unlock a door in the basecamp that will let you start a run from 3-1.

For the third and last shortcut:

• 50,000
  
• A hired companion
  
• The Golden Key (The one you use for the udjat eye, found in the Dwelling)

This will unlock a door in the basecamp that will let you start a run from 5-1.

3. Challenges related

Excavator

Complete the Moon Challenge in a non-seeded run.

Only achievable on the second world.
Once you reach the second world, you will soon find Tun, an NPC that has a rat-face which invites you to the Moon Challenge. This NPC spawns in both Volcana and the Jungle. She’ll ask you to pay a fee of $10,000 to start the Moon Challenge.
All you have to do, is just break your pickaxe. After swinging it some times, it will break, indicating that the challenge is now over.

Torchbearer

Complete the Star Challenge in a non-seeded run.

Only achievable on the fourth world.
In world 4, you will find Tun again, now offering the star challenge. All you have to do here, is just light up all of the torches within a time limit.
The only difference from doing this challenge in the Temple or Tide Pool, is that you will get a different Item on each world. Tide pool being a clone gun, and the Temple being an elixir that cures curse and gives some HP.

Survivor

Complete the Sun Challenge in a non-seeded run.

Only achievable on the 7th world.
In world 7, you will find the sun challenge. The Sun Challenge is difficult, as the room will fill with enemies, and you have to survive until the timer runs out. You can easily make it out alive if you have bombs and paste, as you can just bomb the enemy spawners.

4. Item Related

Her Favorite

Obtain the Kapala in a non-seeded run.

The Kapala is an item obtained by sacrificing 2 damsels into the Altar (or reaching 16 points of favor)

Divine Right

Obtain some royal headwear in a non-seeded run.
The Royal headwear is found at the very top of Vlad's castle. You get there by activating the drill in the Volcana level using the Udjat Eye. Note that there's no way to progress to the next level directly from the Castle area, so you'll need to go back the way you entered it and then exit the level the regular way.

A Second Chance

Obtain the Ankh in a non-seeded run.
The Ankh is found at the top of the area that you access by defeating Olmec and standing on his head to enter the background layer from the entrance that you see above the lava (any back layer entrance will do)

Chosen One

Obtain the Tablet of Destiny in a non-seeded run.

Parenthood

Wake the Eggplant Child in a non-seeded run.
Getting this achievement is a little complicated, as you have to

• Acquire the Eggplant by placing a present box (acquired by a vendor, spawns randomly) on a Kali altar.
  
• Take the Eggplant all the way down to the Ice Caves 5-1.
  
• Place the Eggplant on the purple altar.
  
• The eggplant will hatch and become the Eggplant Child.

You can still do more with the child, like literally discovering a new area that does not appear in the journal until discovered. I don't really know how to get there, so until I have a clear path, I'm sorry, but I'll have to say that you should google "Spelunky 2 Egg Plant level" on your own.

5. "Quest" achievements

Track Star
Finish the Tutorial Speedrun in under 30 seconds.

Self explanatory.

Turkey Whisperer

Bring two turkeys to Yang in a non-seeded run.
Self explanatory.

Support a Local Business

Buy out Yang's Pet Shop in a non-seeded run.
*Yang's Pet Shop appears in the second world, only if you give two turkeys to Yang.

VIP

Enter Madame Tusk's Palace of Pleasure as a guest (in a non-seeded run).

To get inside Madame Tusk's Palace of Pleasure, you need to roll 7 five times. She will recognize you as a "High roller" and invite you to her Palace of Pleasure on 6-3.
There is a trick that If you throw and whip a dice, you will get only number 6 and 1! so this highly amplifies the chances to get this achievement.

Speedlunky

Complete the game in 10 minutes or less without shortcuts in a non-seeded, single-player run.
Self explanatory.

Millonaire

End a run with $1,000,000 or more in a non-seeded, single-player run.

Low Scorer

Complete the game without collecting any treasure and without using shortcuts in a non-seeded, single-player run.

8. Deathmatch related

Arena Champion

Win a First-to-Five Deathmatch against three bots using the Default ruleset.

9. 100% Achievement

The Full Spelunky

Obtain all other achievements.

i think the hedjet also triggers the divine right achievement, you should add that just in case

umm nvm Volcana is actually better than Jungle because idk why but black marrket straight up never spawns. besides you can just bomb your way down to vlads castle without doing any work. Sure maybe grinding for bombs but if ur good at dodging Volcana isnt even that bad. so yeah i always go for Volcana.
