and to make it even better, you dont even need to hold shift down the entire ride, you can just hold it and then let go and your horse will do the rest

As long as you don't sit down again (e.g., to drive around slower wagons or a group of horsemen or open the map), it'll stay the course while you peel off your pursuers. I have aim on toggle so I don't have to hold down the right mouse button .
