Use + and - buttons on counters to increment them up and down.
To edit text fields click the nearby "edit button". A black token will appear. Edit the description of that token. Then press the "edit button" again to add that text to the field.
The text is attached to the character sheet board and will move with it. That can be a bit laggy though so I don't recommend that often.
