Haha! Thanks for sharing your experiences. It sounds like it might be more rewarding for you to setup your own constraints to provide the challenge. For example, 1 build to handle all theme encounters. If double thunderstorm is too easy, can try something else. That's what luicc and I did to get the most out of the fights.
If theme encounters are still too easy, you can try to find solutions to 30 paladins. They exist! Both magical and physical solutions are possible with clever strategies.
The frost king or whatshisname despite being very frosty can be perma frozen. Funny that freeze is the only status its not immune to. Since it starts out with 0 magic armor, a single hydro mage is enough to trivialize the encounter.
The 7 sins is also close enough together that you can delete them with a doublecast thunderstorm (apotheosis+skin graft). This is less the encounter being easy and more the lvl 16 mage spells are too OP.
Only the ship encounter I actually took long enough to kill that the enemies got a turn. It's a pretty normal fight though.
