--Serious speculation--
Here's my take on why the Night's Watch is still needed. Firstly, they can act as arbitrators in case some Free Folks get into disputes. Secondly,  killing the Night King only killed White Walkers near Winterfell; there are still dozens of Others and thousands of wights scattered around in the North. Without the Night King's magic, they only pose a fraction of the threat the Night King did. Nevertheless, like crane toads, they're definitely not something the North wants around and dealing with them will be a long, tedious process, a task perfectly suited for the Night's Watch. Finally, given that the Children of the Forest created the Others via magic, and the fact some Wildlings practice magic, the Night's Watch needs to be around in case any witches or wizards get some sort of "bright" idea.
