How To
After many hand cramps, I dove through the Steam VR settings and figured out how to get toggle grip functionality with the Oculus in H3.

Update: Please note this will disable using A and X to snap-turn. If you change your mind later, thankfully you can switch between control schemes at will using the Steam in-game menu.

1- Open Steam VR and the dashboard menu (while in HMD, press the left controller's menu button)
2- Click Settings> Controller Bindings> choose H3
3- Make sure the controller is set to Touch. Click Edit on the Oculus Legacy Bindings
4- Delete the binding already there for the A button and X button
5- Create a new binding for the A button: Type=Toggle, Function= "Right Grip (Suggested)"
6- Create a new binding for the X button: Type=Toggle, Function= "Left Grip (Suggested)"
7- Click Save as Personal Binding. The below screenshot is how it should all look.

Now, you'll still be able to hold down the grip to pick up/drop stuff as normal, but if you want to keep it equipped, you can just tap the A or X button (depending on the hand) to keep the item equiped after you release the grip button. To drop the item, simply tap the A or X button again.
You can also immediately grab and hold something by hovering over it and hitting the A or X button.

Enjoy your much more comfortable play sessions!

I have also uploaded my binding to the Steam Workshop.

Thanks. I think having to hold the button is pointless because you're holding the controller already. I think toggling grip is just fine. There are situations where you'd want to hold your controller differently in your actual hand where you wouldn't be comfortable keeping the finger on the grip button.

@Linkbro Imagine being such a "boomer" that you actually think VR is meant to be a substitute for reality, as opposed to a video gaming system, and spend your time chastising those who are using it as a video gaming system instead of a substitute for reality. :lunar2019deadpanpig:

Let people play how they want, man.

imagine being such a "gamer" that it's too much effort to stand or hold a button down when you're in virtual reality
