Picking a car for the job
Well, of course you need a car for high speed. What I always use is the Notte, so these tips may not work for every car, but whatever. Don't just pick a car with a very high max speed, such as the stock SBR4 that does 205mph, (not the hillclimb) this is a very unstable car at high speed because of its lack of large tires and downforce. Now, onto doing high speed.
High Speed
Well, now when your doing high speed, you DO NOT want to turn. Know the limits of your car. Nothing is going to turn at 150mph. To accually do the turn, you're going to have to go back to the days of button mashing. If you hold anything other then the thottle in this game, you're going to spin out. Do not let go of the throtte during a turn, or you'll have oversteer and crash. When coming up to a turn, let off the gas, and tap the brake, and get ready to make the turn. When you finnally hit it, do not hold the turn key, once again, you have to tap it quickly and not use the throttle or brake. Now, as with anything, this will require practice to perfect, but I got it down pretty well eventually.
Extra Tips And Tricks
1: Go in to the turn from the wide and cut in to the end, for example, if you are going into a left bend, start out on the far end of the turn (the right side) and end in the inside of the turn (the left side.)
This helps in a lot of games.
2: Know your turns. Don't do your first try maxing out in the turn. learn what it can handle, and if your car can handle it.
3: Road type really does a lot for traction.
Conclusion
Well, thats all I can think of, but it really does help. I hope you can do high speeds good now.

The car is balanced and handles very well. t's just at those speeds, I think it's nuts for the car to be dipping and oversteering like that.

Ha! Funnily enough, I'm fine-tuning the front suspension of my ETK-I, and it's pretty twitchy at high speeds, talking ~200kph. I don't want to alter the general handling of my car too much, and I think the front springs are stiff enough, but I don't wanna be drifting out of control at the slightest turn of the steering wheel. What should I focus on?

Steering with a mouse is an option. Seems stupid, but it works. I actually use mouse + controller pretty frequently. LS up for throttle, LT for brake, LB for handbrake, mouse position for steering, and mouse side keys for shifting.
