Short version: The game is good. It's beautiful in most cases with a streamlined story that finds itself well suited to the Star Wars universe. Combat never quite finds it's foothold to be in-depth or amazing, but it works.

The full thing:
Loading up Jedi: Fallen Order will bring up a few emotions, I found. In the years that EA has had the sole license to make Star Wars themed games, we've been graced with Battlefront 1 and 2. Subpar games on their own, and even more disappointing when you think of all of the Star Wars games we never got to experience. Respawn has a good track record of making story-intensive titles, so it's difficult not to have some sort of excitement.

The game starts off by introducing the player character and establishing the setting. The game is beautiful, Tie-Fighters flying through the air, authentic creatures and ships all around. It's an opening that promises an immersive experience we haven't seen in years.

I'd expect it to take the average player 10-12 hours to complete, maybe less if you avoid all of the unlockable items for your lightsaber.

Story: Most of the game is fantastically written, with characters that matter and a story you can get behind. Some of the best parts are unfortunately too short and come too late in the game and leave you wishing there was more. It moves at a decent pace and provides a purpose to traverse back and forth between planets. It shines in the beginning and the last act, with the middle struggling to keep you engaged. The ending provides a satisfactory closure, while keeping the door open for a sequel.

Gameplay: Souls-like gameplay here folks. A quirky block mechanic that doesn't always work, limited combat force powers(pull, push), and some uninspired platforming that hurt an otherwise solid gameplay loop. How is combat? It's... Well, it's not bad. It isn't great, but it isn't bad. Cal Kestis is no Kyle Katarn or Galen Marek. Yes, you get to swing a lightsaber around and cut bugs or animals into pieces. You do not get to chop up people though. Lightsaber attacks are decent, with most enemies going down in 1-2 slashes. It's the lack of interaction with the environment that hurts the whole Jedi feeling. Pushing enemies off cliffs or over ledges is fun, but I want to toss a boulder at them or something similar.
Platforming isn't so bad. A bit of Uncharted and Tomb Raider feel like the inspiration here. Overall the level design is good and you're not faced with too many "has to be perfect" jumps. Unfortunately it also seems like there's an entire minigame of mud sliding and ice sliding. It's on almost every planet.

Sound: The music is an absolute pleasure to your ears. The sound is spot-on perfect, and the voice acting is top notch.

Graphics: The wookies are ugly. They look downright terrible. Kashyyyk, in comparison to all of the planets, looks bad to be honest. Otherwise this game looks absolutely amazing at the highest settings. Environments are expansive, characters look authentic, and it does a fantastic job of capturing the Star-Wars feeling.
