Ingredients:
Dry: 2 cups all-purpose flour, ½ cup granulated sugar, 2 tsp baking powder, ½ tsp salt
Wet: 1 cup milk, ¼ cup vegetable oil, 2 large eggs, 1 tsp vanilla (optional)
Optional: 1-1½ cups add-ins (blueberries, chocolate chips)
Instructions:
Preheat oven to 400°F (200°C). Line a 12-cup muffin tin.
Whisk dry ingredients in a large bowl.
Whisk wet ingredients in a separate small bowl.
Combine wet and dry ingredients. Mix only until moistened; do not overmix (batter will be lumpy).
Gently fold in add-ins.
Fill muffin cups 2/3 full.
Bake for 15-20 minutes, or until a toothpick comes out clean.
Cool in the pan for 5-10 minutes, then transfer to a wire rack.
Key Tip: Do not overmix the batter for tender muffins!
