Honestly though, your best bet is to get everything DRM-free. Steam has had some improvements over the years, but it has yet to improve this. With DRM-free games, at the very least, you won't be forced to update, and you get the option to update however you like. And GOG is particularly good in this regard, because it outright lets you roll back updates, and gives you access to older versions.
Unfortunately, not everything is available DRM-free, but you can always pester the developers/publishers to make it available DRM-free.
