Steam Game Recording | Selecting Audio Devices and Separating Audio Tracks
TL;DR: If you want to record more than just your game audio, "All System Audio" and "Game and Selected Programs" ain't going to cut it. You should be able to select certain audio tracks or devices.

For me it's important to be able to have more choices which audio I want to record. Maybe some people or content creators can relate and know about audio mixers like GoXLR, where you have custom audio devices.
With a mixer like this, the voice chat in programs like Discord isn't usually set through normal system audio. When you select the Discord app in your Steam Game Recording settings, the voice chat won't be heard. Only system sounds like joining or disconnecting a channel.

What mixers like GoXLR can do to circumvent this issue though, is a so called "Broadcast Streaming Mix", which count's as an input device with all audio tracks already mixed together how you want. It's perfect for Software like OBS. For the Steam Game Recording I would have to select this mix as my microphone. Then I would have all my audio tracks in the game recording, but as a mic.
I did some testing with this and it seems that for the game recording, the input for the microphone is not the one you choose from the Steam voice input settings, but Windows default input device. (?) Also the mix sounded sometimes choppy. A lot of other people seems to be reporting issues with the mic being bad as well, so this issue might not be related to my mix being the mic.

Another issue is that it records the game audio twice. One from the mix as my mic and one default recording you can not turn off. I would have to turn off the game audio of my mix to circumvent that. That wouldn't be any problem though, if I could select to separate audio tracks (like Nvidia's Shadowplay).

In conclusion it would be nice to select custom audio devices and have the opportunity to save the clip with separate audio tracks. Other than that I am really happy so far with the Steam Game Recorder. I would finally be able to uninstall GeForce Experience.

PS: And if it could encode via AV1 for RTX 4080 graphic's cards and newer too that would be perfect.

This seems to be similar to a question I wanted to ask. I was wondering if it would be possible to record me talking while playing the game. Having the audio files be separate from each other and from the video would also be incredibly helpful. From your post, I'm gathering that's not currently possible. However, I will be following to see if Steam replies to either explain how to do it, or to inform us that they updated it to provide us with these features.

Thank you for so eruditely describing the issue. I am wanting to get into recording gameplay to post on social media, but OBS takes up a lot of processing on my computer, and I'm also not very techy. I don't even really know what questions to ask.

I have the same issue, I use VoiceMeeter which is essentially what you describe GoXLR to be and I use it to mix and balance audio volumes of my mic and my friends and the game, all in one place. Shadowplay can easily just take the final output from my VoiceMeeter mix as a microphone input and that's that, but Steams Game Recorder won't, and it's frustrating to not be able to capture audio from my friends through discord when saving highlights of funny moments. All I get is a badly balanced game audio + my hardware mic where you can barely hear me over the game. If Steam Game Recorder could just take a simple custom microphone input I can finally ditch Shadowplay and live a happy life. The Game Recorder is flawless otherwise, unlike Shadowplay which randomly crashes, stops recording, or freezes up. But Steam just works, every time.
Oh, didn't expect to find someone with the same voicemeeter problem. I would really apprecieate if we could choose which device steam will use while recording game
