Big Picture is for living room environment. Not office, not desktop, but living room. How big are the chances that someone has 3 tv-sets in eyefinity in their living room? Eyefinity is for desktop users, not for living room environment. So it's kinda counterproductive to spend development time on implementing features which usage is neglected by working environment itself.
I mean it doesn't seem like a logical step right now. I'm sure Valve will develop some support for people who like to use Big Picture mode on their desktops, but it's not pressing matter obviously. So I doubt there will be 3 display support soon, at least until all other more important stuff is fixed and implemented.
Part of the issue is we who own a steam controller are compelled to use big picture to setup the controller, whether we are on PC or a TV. And since I am a surround +1 user (4 monitors, 3 in surround) it would be nice to have this working for us also. It is ignorant to think that PC users would just ignore big picture and not be able to use our steam controllers properly.
