Report a translation problem
In the end I fixed it, but only after trying a bunch of things. I ended up messing with the settings, even trying to sync it to my Switch and such. What seemed to work in the end was syncing my Pro Controller with my Switch and updating the firmware of the controller itself with the Switch, that seemed to do the trick! So either syncing my controller, updating it or me messing with the settings helped... I sadly couldn't tell you which.
If someone knows if there's a way to update the firmware of the controller without a Switch, that could be a solution, but otherwise it seems you need to connect it to one to update.
But thanks for the help, maybe you can figure out which one of those could have solved it?
I currently have Switch Pro Configuration Support and Use Nintendo Button Layout on and it doesn't spazz out anymore as far as I can tell with the whole process I did.
