I don't get how you would ever get a human to face away from you unless they're in the middle of climbing because everyone i play against has the amazing ability to always keep me in their field of vision. Also, it doesn't matter if you pounce from behind as they turn around in the animation anyway and they can still flash you at that point.
Well, if they are affected by Horde Spit, they'll, at some point, have to turn towards the area of higher elevation that they're trying to flee to, if they want to be safe from bombers. I do agree that some people are very proficient at turning towards you in order to avoid tackles/pounces; however, just like the tackle-evasion animation, the pounce-interruption animation locks them in place for quite some time—bombers can kill the human during pounce interruptions and tackle evasions.

I will mention: even some of the most skilled people I've fought start getting hit by a lot more tackles than usual once they see that the bombers are close. Remember to use the "tendril-sprint" technique so you don't struggle to keep up with them—the very same technique you can use to land successful side/back tackles on people that aren't even affected by a spit (mouse, with high enough sensitivity to make sharp turns during sprinting, recommended—I had to stop playing controller to play hunter properly).

You recover stamina faster when you are idle—even faster when you are crouched. So, if your energy was high enough, after the successful GP, you can crouch and wait for it to be full. I often just keep fighting them so they don't have a chance to throw another flare prior to my energy coming back.

Also, regarding the Horde Spit thing, I'm confident the range of Horde Spit is large enough that, if they stay close enough to be protected by the flare, they will get hit by any Horde Spit that detonates on their flare. I will mention: in order to be safe from pounces, the human actually has to be closer to the center than the extravagant visual effect of the flare might make one think. There are many times I've pounced a UV-suppressed human even though they still seemed to be within the light radius of their flare, all because they were close to the edge.

There are scenarios in which I feinted a ground pound to get someone to backslide away from the flare, only to pounce them (either I was using UV Block as well, or I was visibly charging an aerial GP whilst outside of the flare's range, thus retaining high energy). Some try to anticipate your GP and thus grapple above, hoping to DFA you after a missed GP—I just look up and tackle those ones after cancelling my GP.

That is the correct technique, yes, and I do incorporate it into my playstyle—especially against people that are over-defensive and/or low on HP. I'm a mutation-3, level-60 Apex Predator with 160 hours in night hunter. I win most of my matches and I would say I am competent, though I haven't acquired full mechanical mastery of night hunter (the people with 1,000+ hours make less mistakes than me).

It's only viable if their flashlight energy is low—and especially if it's, say, an isolated person in a 1v4, since the strength of their UV flashlight and flares will be at its lowest with that many humans present in the session. A situation that enables you to pounce-spam generally won't occur frequently, though. Also, if I'm in close proximity to an isolated human whose UV flashlight energy is low, I typically don't have a problem playing aggressively enough that they likely won't have a chance to lay down a flare without immediately getting GPed along with it.

I don't see how you can even pull off GP -> Spit when the stun time for a human is so short and they’ll immediately start swinging and kill you in three hits. Whenever i actually pull off a GP, I instantly tendril away to not get killed.
Personally, the human’s heal speed doesn’t seem too oppressive—on Nightmare, anyway. Also, GP staggers the human long enough that you can get a guaranteed spit-stick if your accuracy is on point. As for the last thing you said, yeah, you have to be careful where you decide to do more than one GP. If you’re on a road with lots of cars, the cars can protect you, since you can GP humans through walls/obstacles, but humans cannot slice you through obstacles.
