I am sure that your "3.15" method is really good, and I will try it later. But I want to understand/sort out my omission/mistake first.
And so (as the simplest way) my actions before a torpedo attack. I am motionless at periscope depth. One mechanic is at the dive control post, the second mechanic "warms up" the torpedo. I am behind the periscope in the conning tower. The boatswain is behind the "TDC" device.
1. Identify the target.
2. I give the command "sink the torpedo tube".
3. Determine the target's course: I put a point on the map (let's call it "A") at the location of the ship/target. After some game time (about 15 minutes), I put another point (let's call it point "B") at the location of the target. Then I draw a line (ray) starting at the original point "A" with the center at point "B", and at the end of the line I put point "C".
4. I calculate the target course angle (TCA). I enter the resulting angle (for example: 78 degrees) into the control panel. I press the button for transmitting data to the "TDC" device, and hear a response about receiving it. At the same time, the periscope sight is already aimed at the center of the ship/target.
5. I calculate the target speed. The easiest way is to use the periscope sight. (I start counting the time when the ship's bow is on the vertical line of the periscope sight, and I finish counting the time when the ship's stern passes this line). I also enter the received data (for example, 6 knots) into the control panel, send the data to the "TDC" device, and hear a response about their receipt.
6. I measure the distance from the submarine to the target (for example: 1.8 km). I enter the received data into the control panel and transmit it to the "TDC" device, I hear a response about their receipt.
I even tried (using the "torpedo direction" beam) to determine the distance from the submarine to the point where the torpedo hit my target, and entered exactly this data (for example, 1.7 km).
8. Before firing the torpedo, I update the target's course angle data (since while I was calculating the target's speed, the ship moved). I enter the received data (for example, 79 degrees) into the control panel, send the data to the "TDC" device, and hear a response about its receipt.
Saved in the game. Although I don't use saves at all (only in the port).
Fired a shot. Result: the torpedo passed behind the target.
Loaded the save.
Changed the speed data on the panel (instead of 6 knots, I set 7 knots).
Fired. Result: the torpedo passed in front of the ship.
Loaded the save again. Changed only the "target heading angle" data. (added 2 degrees to my calculated 79 degrees). That is, entered 81 degrees into the control panel.
Shot. Result: hit the center of the ship.
